This is a favorite meal of my wife and the nice thing is it isn't expensive to make and can be made to fit into our point following very easily. In fact, the buffalo chicken part of this meal is simple and low point. The buffalo sauce is point FREE and the only points are related to the amount of chicken you use.
The point killer in this meal is the delicious hashbrown casserole. I use to make this recipe all the time and wasn't about to quit so I have figured a few ways to help reduce the points so that the points per once serving is just 1!
Alright, then lets go and get to the recipes
Buffalo Chicken
- Two 6oz Chicken Breasts or Tenders
- 1/4 cup Frank's Red Hot Sauce
- 1 Tablespoon Chicken Broth
- 1 Tablespoon Vinegar
- Dash Black Pepper (optional)
- Dash Garlic Powder (optional)
- Mix the Hot Sauce, Chicken Broth and Vinegar
- Place Chicken Breasts in Oven Safe Dish
- Pour Buffalo Sauce over Chicken
Hashbrown Casserole, Weight Watcher Style
- (1) Package Shredded Hashbrowns
- (1) Can Condensed 98% Fat Free Cream of Chicken Soup
- 8 oz Fat Free Sour Cream
- (2) Cups Reduced Fat Shredded Cheddar Cheese (can substitute Fat Free if you wish)
- 1/2 cup Chicken Broth
- 1 1/2 cups Corn Flakes
- 2 Tablespoons Chicken Broth
- Mix hashbrowns, soup and sour cream
- Mix in Cheese
- Mix in Broth
- place mixture into oven safe dish
Topping:
- Take corn flakes and coarsely crumble
- Add broth and make sure all flakes are coated
- Place flake topping evenly over casserole
Bake both the chicken and the casserole in the oven for 50 to 60 minutes at 350 degrees
Points Plus Values:
(1) 6oz Chicken Breast with Buffalo Sauce (6pts)
4 oz Hashbrown Casserole (4pts)
Total for meal: 10pts

I just wanted to make sure, this is on the new points sytem not the old point system...right?
